To bring out the best in the Verdejo grapes, the must is left in contact with the skins for 6-12 hours at a cool 6-8ºC, allowing for maximum extraction of aromas and varietal character. A slow clarification process enhances the fruity notes by increasing contact between the juice and grape solids. Fermentation takes place at a controlled low temperature (14-16ºC), preserving and amplifying the wine’s signature freshness and complexity.
This year’s harvest saw a mix of light spring rains and some showers after ripening in late August, followed by a dry spell during the crucial ripening period. While this reduced overall grape yield, it resulted in a more concentrated and higher-quality harvest. The vineyards, aged between 8 and 15 years, include both bush vines and trellised plantings, all dry-farmed. With yields ranging from 6,000 to 8,000 kg per hectare, the grapes packed more intensity, leading to a wine with richer flavors and depth.

Fresh feel, rich in nuances. Good expression of Verdejo that lasts long. Structured with a pleasant acidity. Retronasal aniseed and floral with a certain presence of citrus fruits (grapefruit and lime).
