The vineyard is approximately 80 years old and pruning is done selectively manually in green, to regulate the number of clusters per vine.
The soil is mainly composed of sandstone, clay and limestone sediments. It is
made in 10,000 l stainless steel tanks, with temperature control. Subsequently, it will spend 18 months in oak barrels (20% American and 80% French). Natural clarification during aging for 2 months in a tank to blend the aromas before bottling, followed by 12 months at rest and release to the market. Production 15,000 numbered bottles per year.
Bright ruby red color with purple hues.
On the nose it is highly complex, with spicy aromas of pepper,
cinnamon and vanilla with notes of truffle on a background of
very ripe fruit and all well assembled together with the mineral
notes obtained from our clay soils. And on the palate this wine
is meaty, broad and long, with spicy aromas in retro nasal with
a tasty and complex finish, very mineral with hints of the land.
Cellaring: Keep it in a place with a constant temperature
between 8º and 15ºC for 5 or 15 years.
This wine goes well with creams, soups, pastaand meats in general, especially red beef, game meats and stews.
