Possente - KIMA

Grape Varieties:

100% Catarratto (Bio)

Area of Production:

South-western Sicily; Salaparuta Territory

Alcohol Content:

13.5%

Serving Temperature:

6- 8° C

Harvest:

Manual, last week of August and before September

Vinification:

VSP (vertical shoot positioning), with wooden stakes and stainless steel wires, cordon spur pruning.  Fermentation at controlled temperatures in stainless steel tanks and aging on the lees for 3 months.

Ageing:

2 months in the bottle. Unfiltered

Colour:

Straw yellow colour with greenish highlights

Bouquet and Palate:

Opens with hint of almond and then gives way to wild flowers and white-fleshed fruit.  In the mouth, it has a sip of good dynamism and a nice freshness on the palate.

Food Pairing:

Excellent with appetizers and snacks, with shellfish and salads.

Possente - grillo

Grape Varieties:

100% Grillo (Bio)

Area of Production:

South-western Sicily; Salaparuta Territory

Alcohol Content:

13%

Serving Temperature:

8 - 10° C

Harvest:

Last week of August

Vinification:

Pre-fermentation cryo-maceration at a temperature of 5/6°C. Fermentation at controlled temperatures in stainless steel tanks.

Ageing:

3 months in the bottle. Unfiltered

Colour:

Light and bright straw yellow

Bouquet and Palate:

Floral notes of wildflowers and orange blossom. On the palate the wine is fresh, well- structured with a pleasant, slightly savoury, mineral finish.

Food Pairing:

Pairs well with fish and shellfish.

Possente - Abir

Grape Varieties:

100% Zibibbo (Moscato d'Alessandria)  - Bio

Area of Production:

Western Sicily; Salaparuta Territory

Alcohol Content:

12%

Serving Temperature:

8 - 10° C

Harvest:

Second and third decade of August

Vinification:

Fermentation at controlled temperatures in stainless steel tanks and aging on lees naturally developed by fermentation for 3 months.

Ageing:

3 months in the bottle. Unfiltered

Colour:

This sparkling wine is a youthful pale yellow to green colour.

Bouquet and Palate:

Delicate aromas of mush, sherbet, fresh passionfruit and apple. On the palate its bursting with bubbles and summer fruit flavours with a fresh vibrant finish.

Food Pairing:

Zibibbo is a very aromatic wine and can be paired with shellfish as well as spicy dishes and in particular Indian food. Zibibbo is also perfect as a dessert wine and pairs well with Sicilian Cassata and other traditional Sicilian desserts.

Possente - acini di grillo

Grape Varieties:

100% Grillo (Bio)

Area of Production:

South-western Sicily; Salaparuta Territory

Alcohol Content:

13.5%

Serving Temperature:

6- 8° C

Harvest:

Manual, last week of August 

Vinification:

In stainless steel with short maceration on the skins without adding sulfites.

Ageing:

4 months in steel tanks. Unfiltered

Colour:

Skin contact orange wine (white)

Bouquet and Palate:

Great minerality and richness on palate.

Food Pairing:

Excellent with appetizers and snacks, with shellfish and salads.
